is Soba?
Soba is the Japanese name for Buckwheat. It is known as the
world’s healthiest food. A nutritional uniqueness of
buckwheat is the quality of protein it contains. The proteins
in buckwheat is a "complete" protein than any other
plant source, even soybeans. It has plenty of protein and
B vitamins and is rich in phosphorus, potassium, iron, and
calcium. Although buckwheat has many grain-like characteristics,
it is from an entirely different botanical family, and is
actually a fruit. Buckwheat is composed of 75% "complex"
carbohydrates. Since the starch of buckwheat is complex carbohydrates,
the “shochu” distilled from buckwheat has distinctive
characters. Sweet, smooth and sensational taste is its characteristic
property.
What is Shochu?
Shochu is Japanese traditional clear
distilled liquor. It can be distilled from various materials,
such as rice, barley, corn, sweet potato, taro, . . . and
buckwheat. The shochu distilled from buckwheat is named “sobashochu”. |
